Riia’s Vegan Banana Nut Muffins*Altered from this recipe
Ingredients: 3 Ripe Bananas (mashed) 3 tbsp Olive Oil 2 cups flour (aim for healthier flours…no white flours!) 3/4 cup Sugar (or applesauce as a substitute) 1 tsp Baking Soda 1 tsp Vanilla Extract 3 tsp Cinnamon (or desired amount) 1/2 cup Walnuts (optional)
How to: Preheat oven to 350. Mix mashed bananas with olive oil. Add in flour, sugar, baking soda,vanilla extract and cinnamon. Blend using an electric mixer until smooth texture. Stir in walnuts. Pour batter into desired pan. I chose a cupcake tray because it makes portion control easier!  Cook for about 30-60 minutes, depending on pan size! Enjoy :)

Last night I made the decision to NOT vampire eat (a bad habit that I had gotten back into recently). AND… I didn’t do it! I was tempted by the delicious popchips that the person I was with was eating while watching The Voice (on Tivo… it was 11pm). But INSTEAD I made my “Special Tea” and skipped the snacking- just as I had promised myself. And you know what? I felt so proud of myself when I woke up and my stomach was nice and tight. (I’ll eat those popchips with lunch :). WHAT BAD HABIT ARE YOU GIVING UP TODAY?! High-res
